One-Pan Lamb Chops with Cumin Soy Glaze

- 1 13" x 18" Baking Sheet
Ingredients
Main Ingredients:
- 1 rack of lamb - cut into individual chops (about 8 chops)
- 2 cloves garlic - sliced
- 1/2 apple - thinly sliced
- 1 small white or yellow onion - sliced and divided
- 1 small head broccoli - cut into florets
- 1 carrot - cut into bite-sized pieces or strips
Sauce Ingredients:
- 1/3 cup soy sauce
- 1 tsp garlic powder
- 1 tsp paprika
- 2 tsp cumin
- 1 tsp cumin seeds
- 1 tsp onion salt - I’m using Trader Joes’ but any brand works!
- 1 tbsp honey
- 2 tsp olive oil
Instructions
- In a bowl, combine all the sauce ingredients and mix well.
- In a large bowl, add lamb chops, sliced garlic, sliced apple, and half of the sliced onions. Pour in half of the sauce and use your hands to mix until the lamb chops are evenly coated with the sauce. Let marinate for at least 20 minutes.
- Preheat the oven to 400°F while the lamb chops are marinating.
- In another large bowl, combine the broccoli, carrots, and the remaining onions. Add the remaining sauce and toss until well coated.
- Spread the vegetables evenly on a large baking sheet. Nestle the lamb chops in between the vegetables in a single layer.
- Bake for 20–23 minutes, or until the lamb is cooked to your desired doneness and the vegetables are tender.
