1rack of lamb - cut into individual chops (about 8 chops)
2clovesgarlic - sliced
1/2apple - thinly sliced
1small white or yellow onion - sliced and divided
1small head broccoli - cut into florets
1carrot - cut into bite-sized pieces or strips
Sauce Ingredients:
1/3cupsoy sauce
1tspgarlic powder
1tsppaprika
2tspcumin
1tspcumin seeds
1tsponion salt - I’m using Trader Joes’ but any brand works!
1tbsphoney
2tspolive oil
Instructions
In a bowl, combine all the sauce ingredients and mix well.
In a large bowl, add lamb chops, sliced garlic, sliced apple, and half of the sliced onions. Pour in half of the sauce and use your hands to mix until the lamb chops are evenly coated with the sauce. Let marinate for at least 20 minutes.
Preheat the oven to 400°F while the lamb chops are marinating.
In another large bowl, combine the broccoli, carrots, and the remaining onions. Add the remaining sauce and toss until well coated.
Spread the vegetables evenly on a large baking sheet. Nestle the lamb chops in between the vegetables in a single layer.
Bake for 20–23 minutes, or until the lamb is cooked to your desired doneness and the vegetables are tender.
