Ingredients:
4 Hoagie rolls or sub rolls
2 chicken breasts
16 oz fresh Mozzarella, cut into slices
3/4 - 1 cup pesto
2 egg, beaten
1 cup flour, season with salt and pepper
2 cups Italian Breadcrumbs
3 cloves garlic, minced
2 shallots, finely diced
3 tbsp tomato paste
2 tsp Calabrian chili (optional)
1/4 cup vodka, optional
1 cup heavy cream
1/2 cup chicken stock or water
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1/2 cup freshly grated parmesan

For the baked potatoes:
6 medium russet potatoes
1-2 tbsp olive oil
Salt & pepper, to taste
8 tbsp butter
2 cups shredded sharp cheddar cheese

1. Preheat oven to 400°F. then prick with a fork a few times. Rub with olive oil and season with salt. Bake for 1 hour to 1 hour 10 minutes, until fork-tender. Remove from oven and set aside.
2. Slice each baked potato open lengthwise and gently push the ends toward the center to open. Season the inside lightly with salt and pepper.
3. Top each potato with 1–1½ tablespoons butter and shredded cheddar cheese. Broil on high for 2–3 minutes until the cheese is melted.

Korean Bibimbap Ingredients:

1 zucchini, thinly sliced
2 medium carrots, shredded
8oz baby Bella or shiitake mushroom, sliced
8 oz bean spouts
10-12 oz spinach
Sweet & Spicy Korean Fried Chicken (recipe available on my website)
Cooked rice
2 tsp Salt
2 tsp Sesame oil, divided
Olive oil, for cooking

Sauce Ingredients:
2 tbsp gochujang
1 tsp sugar
1.5 tsp soy sauce
2 tsp sesame oil
1 tbsp water
1/2 tsp apple cider vinegar, optional

1. Cook the vegetables: In a wok or nonstick pan over medium heat, cook the zucchini, carrots, and mushrooms separately with a little oil and a pinch of salt until softened and fully cooked.
- Zucchini: about 2 minutes (medium heat)
- Carrots: 4-5 minutes (medium-low heat)
- Mushrooms: 2-3 minutes, until tender (medium heat, add more oil if needed)

2. Blanch and season greens: Bring a pot of water to a boil. Blanch the spinach for 30–60 seconds until wilted, then remove and set aside. Blanch the bean sprouts for 2–3 minutes until slightly softened.Drain both well. Squeeze excess water from the spinach, then season each with a pinch of salt and about 1 tsp sesame oil.
3. Assemble the bibimbap: Add ¾–1 cup of cooked rice to a bowl. Arrange the cooked vegetables on top, along with the Korean fried chicken. Drizzle your sauce of choice over the top, mix, and enjoy!
