Honey Peach and Prosciutto Crostini
Ingredients
- 1 Baguette - cut into 1/4 inch slices
- 2 ripe peaches - thinly sliced
- olive oil
- 2-3 tbsp honey
- 1 tbsp cinnamon
- 1 cup ricotta or cream cheese
- 3 oz Prosciutto - break into pieces
- Balsamic glaze - for drizzling
- 1/3 cup Fresh basil - thinly sliced
Instructions
- Preheat over to 375F.
- Lay baguette slices in a single layer on a baking sheet. Brush each side with a thin layer of olive oil. Bake for 6-8 minutes until crispy.
- In a large non-stick pan, heat 2 tablespoons of olive oil over medium heat. Lay peach slices in a single layer in the pan then evenly drizzle honey and ground cinnamon over them.
- Once the peach slices are soft, toss them in the pan a few times to ensure they are evenly coated with honey and cinnamon. Turn off the heat and set them aside.
- Assemble crostini: Spread about 1 tablespoon of ricotta or cream cheese on each slice of bread. Top it with a slice of prosciutto and a couple slices of prepared honey peach slices. Drizzle some balsamic glaze over the top and garnish with a little bit of basil.
