Crunch Asian Noodle Salad
Ingredients
Main Ingredients:
- 6 oz soba noodles
- 2 cups shredded green cabbage
- 1 cups shredded purple cabbage
- 1/2 cup shredded carrots
- 1/2 cup snap peas - thinly sliced
- 1/2 cup chopped cilantro
- 1/4 cup chopped green onions
- 1 tbsp sesame seeds
- Boiled eggs
Dressing:
- 2 tbsp soy sauce
- 2 tbsp ponzu sauce
- 1/2 tbsp sesame oil
- 2 cloves garlic - minced
- Juice of 1 lemon
- 1 - 1.5 tbsp honey
- 1 tbsp chili crisp
Instructions
- Cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process and cool the noodles.
- In a small bowl or mason jar, combine all the dressing ingredients and whisk or shake until well combined.
- In a large bowl, combine the cooked soba noodles, green cabbage, purple cabbage, carrots, snap peas, cilantro, green onions, and sesame seeds. Pour the dressing over the salad and toss until everything is evenly coated.
- Plate and add the eggs on the side. Enjoy!
