What makes these sushi bake cups so special is their simplicity and rich flavor. Using just a handful of ingredients, including sushi rice, creamy mayo, savory imitation crab, and tangy sriracha, you can create a mouthwatering dish that will have everyone coming back for more. INGREDIENTS USED & NUTRITIONAL VALUE

Salmon fillet – Salmon is a highly nutritious fish, rich in protein, healthy fats, vitamins, and minerals, such as vitamin D, vitamin B12, vitamin B6, vitamin E, as well as selenium, phosphorus, potassium, and magnesium. It also contains omega-3 fatty acids, which are beneficial for heart health.

Imitation crab – also known as surimi, is a seafood product made from a combination of minced fish (often pollock or another whitefish), starches, and flavorings. It’s easily accessible, super versatile, and a good source of protein.

Rice – The best type of rice for sushi bake is short-grain Japanese rice, also known as sushi rice. This type of rice has a sticky texture when cooked, which helps the ingredients hold together well in the bake cups.

Nori (Roasted Seaweed) – We will be using nori sheets for this recipe. We cut large nori sheets into 3.5″ squares and they will be the “cups” that hold everything in place.

Kewpie Mayonnaise (or regular mayo) – Kewpie Mayonnaise is a very popular Japanese mayonnaise known for its creamy and velvety texture, as well as rich flavor. Kewpie mayonnaise has a slightly sweeter and tangier flavor profile compared to traditional mayonnaise, which makes it perfect for this recipe. If you don’t have Kewpie Mayo, no worries! Regular Mayo works just as well!

Cream Cheese – Cream cheese is added to enhance the creaminess and richness of this dish. It adds a mild tanginess and subtle sweetness to sushi bake, which really adds texture and depth to the overall flavor. If you don’t have cream cheese on hand or prefer to leave it out, that’s perfect ok!

Sriracha –

Furikake (optional) – Furikake is a versatile Japanese seasoning blend. It typically consists of a mixture of dried seaweed (nori), sesame seeds, bonito flakes (dried fish flakes), dried fish eggs (roe), and a variety of other seasonings. It’s savory, salty, and slightly sweet. The addition of Furikake really takes these sushi bake cups to the next level.

HOW TO MAKE SUSHI BAKE CUPS

  • Preheat oven to 400°F.
  • In a bowl, add prepared salmon, imitation crab, soy sauce, mayo, cream cheese, sriracha, salt, and black pepper. Mix everything until well combined.
  • Add cooked white rice to a bowl, then add white vinegar. Mix well.
  • Add 2 tablespoons of rice to each nori square. Spread the rice flat evenly in the middle.
  • Press each Nori square into the muffin tin with a spoon.
  • Add about 1.5-2 tablespoon of the marinated salmon and imitation crab on top of each sushi bake cup.
  • Bake in the oven for 15-16 minutes. Switch to broil for the last 2 minutes to make them golden and crispy on top.
  • Take the sushi bake cups out of the oven. Drizzle some more mayo and Sriracha sauce, then sprinkle some Furikake on top (if using).
  • Garnish with some chopped green onions & enjoy!

  • 1 Salmon fillet - cut into small pieces
  • 5oz Imitation crab - cut into small pieces
  • 1 cup cooked white or sushi rice
  • 2 tsp white vinegar
  • 2 nori sheets - cut into 3.5-inch squares
  • 1 green onion - chopped, for garnish
  • 2 tsp soy sauce
  • 2 tbsp kewpie mayo or regular mayo
  • 2 tbsp cream cheese
  • 2 tsp Sriracha
  • 1 pinch salt
  • 1 tsp ground black pepper
  • Furikake rice seasoning - for sprinkling, optional

Sauce on top:

  • 2 tbsp mayo
  • 2-3 tsp Sriracha

Instructions
