Sauce Ingredients:
1/4
cup
sweet Thai chili sauce
1
tbsp
mayo
1/4
tsp
soy sauce
Juice of 1 lime
1
pinch
of salt
Black pepper

tbsp
chopped cilantro
Instructions
Make the marinade:
In a large bowl, combine all the marinade ingredients and mix well.
Marinate the chicken:
Add the chicken thigh pieces to the marinade, mix until fully combined and let sit for 10-15 minutes.
Assemble the skewers:
Thread the chicken pieces onto skewer that will fit into your air fryer. Pack the chicken pieces together without leaving gaps so they stay moist.
Cook the skewers:
Air fry at 400°F for 17-20 minutes until fully cooked through.
Make the sauce:
In a separate bowl, whisk together all the sauce ingredients until smooth, set aside.
Finish:
When the chicken skewers are done cooking, drizzle 2-3 teaspoons of prepared sauce over each skewer.
Serve:
Enjoy warm over steamed white rice. Optional: add a squeeze of lime juice or a sprinkle of extra chopped cilantro on top.
