Thai Chicken Skewers with Sweet Chili Sauce

Ingredients
  

Main Ingredients:

  • 5 large chicken thighs - cut into 1” pieces

Marinade Ingredients:

  • 2 cloves garlic - minced
  • 2 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder - optional
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1/2 lime
  • 1 pinch sugar

Sauce Ingredients:

  • 1/4 cup sweet Thai chili sauce
  • 1 tbsp mayo
  • 1/4 tsp soy sauce
  • Juice of 1 lime
  • 1 pinch of salt
  • Black pepper
  • 2 tbsp chopped cilantro

Instructions
 

Make the marinade:

  • In a large bowl, combine all the marinade ingredients and mix well.

Marinate the chicken:

  • Add the chicken thigh pieces to the marinade, mix until fully combined and let sit for 10-15 minutes.

Assemble the skewers:

  • Thread the chicken pieces onto skewer that will fit into your air fryer. Pack the chicken pieces together without leaving gaps so they stay moist.

Cook the skewers:

  • Air fry at 400°F for 17-20 minutes until fully cooked through.

Make the sauce:

  • In a separate bowl, whisk together all the sauce ingredients until smooth, set aside.

Finish:

  • When the chicken skewers are done cooking, drizzle 2-3 teaspoons of prepared sauce over each skewer.

Serve:

  • Enjoy warm over steamed white rice. Optional: add a squeeze of lime juice or a sprinkle of extra chopped cilantro on top.
