Sweet and Sour Fried Eggs

- 3 eggs
- 2 tbsp oil
- 1 scallion - for garnish
- Sauce Ingredients:
- 1 1/2 tbsp soy sauce
- 1/2 tsp dark say sauce
- 1 tbsp vineggar
- 1 tbsp ketchup
- 2 tsp sugar
- 1 tsp cornstarch
- 1/4 cup water
In a small bowl, add all the sauce ingredients and mix until well combined.
Heat 2 tablespoons of oil in a nonstick skillet over medium heat. Once the oil is hot, crack in the eggs. Let them cook until the whites are almost set and the edges start to crisp. Flip the eggs gently with a spatula and cook for just a few more seconds on the other side—this gives the eggs a lovely golden texture while keeping the yolks soft and jammy.
Pour the prepared sauce over the eggs in the pan and let it simmer until the sauce starts to thicken. Flip the eggs one more time to ensure that both sides are evenly coated with the sauce.
Sprinkle some chopped scallion on top and serve the eggs hot with a bowl of steamed rice. Enjoy!
