In a bowl, combine chicken thighs with ginger paste, garlic powder, salt, black pepper, soy sauce, and oyster sauce. Mix until evenly coated and let marinate for 10 minutes.
Prepare the sauce:
In a separate bowl, combine all the sauce ingredients and mix until well combined. Set aside.
Sear the chicken:
Heat 1 tablespoon of oil in a large non-stick pan over medium-high heat. Once hot, add the chicken thighs in a single layer. Sear for 4-5 minutes per side, undisturbed, until nicely charred and cooked through. Remove the chicken to a cutting board and reduce heat to medium.
Add bourbon (optional):
Pour in the bourbon and let it simmer for a minute, scraping up any browned bits from the bottom of the pan.
Cook the sauce:
Pour in the prepared sauce and stir. Let it simmer for 2–3 minutes until slightly thickened.
Combine and finish:
Cut the cooked chicken into bite-sized pieces (or slice into strips), then return it to the pan. Toss well and cook for another 2–3 minutes until the sauce thickens and evenly coats the chicken.
Serve:
Garnish with chopped green onions and serve warm over steamed rice and a side of veggies. Enjoy!
