Spicy Caramelized Shallot Pasta with mushroom

Main Ingredients:
- 2 tsp oil
- 2 tbsp butter
- 200 g pasta of your choice - I'm using Pappardelle
- 6 shallots - thinly sliced
- 1 1/2 cups sliced baby bella mushrooms
- 3 cloves garlic - minced or sliced
- 2 oz can Anchovy fillets - chopped
- 3 tbsp tomato paste
- 1/2 cup milk
- 1/2 cup Parmesan cheese - freshly grated
- Chopped parsley - for garnish
Seasonings:
- 2-3 tsp Calabrian chilli / chili flakes
- 1 tsp Italian seasoning
- 1/4 tsp salt
- 1/2 tsp ground black pepper
Cook pasta according to package directions. Drain the cooked pasta and reserve 1/2 cup of pasta water.
In the meantime, heat oil and butter in a non-stick pan over low-medium heat. Add sliced shallots and garlic, sauté for 6-7 minutes until the shallots become soft and slightly browned.
Add anchovy fillets and mushrooms, stir-fry for about 2 minutes until the mushroom slices become soft.
Add tomato paste and all the seasonings. Stir and cook until everything is well combined.
Stir in cooked pasta, then pour in the milk and pasta water. Cook until it becomes creamy and the pasta is all covered with the sauce.
Plate the pasta. Garnish with some chopped parsley and a generous amount of freshly grated parmesan cheese on top.
Serve warm and enjoy!
