Spicy Caramelized Shallot Pasta with mushroom

This Spicy Caramelized Shallot Pasta with Mushrooms is a flavor-packed dish that combines the sweetness of caramelized shallots, the umami richness of mushrooms, and a hint of chili heat.

Ingredients
  

Main Ingredients:

  • 2 tsp oil
  • 2 tbsp butter
  • 200 g pasta of your choice - I'm using Pappardelle
  • 6 shallots - thinly sliced
  • 1 1/2 cups sliced baby bella mushrooms
  • 3 cloves garlic - minced or sliced
  • 2 oz can Anchovy fillets - chopped
  • 3 tbsp tomato paste
  • 1/2 cup milk
  • 1/2 cup Parmesan cheese - freshly grated
  • Chopped parsley - for garnish

Seasonings:

  • 2-3 tsp Calabrian chilli / chili flakes
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper

Instructions
 

  • Cook pasta according to package directions. Drain the cooked pasta and reserve 1/2 cup of pasta water.
  • In the meantime, heat oil and butter in a non-stick pan over low-medium heat. Add sliced shallots and garlic, sauté for 6-7 minutes until the shallots become soft and slightly browned.
  • Add anchovy fillets and mushrooms, stir-fry for about 2 minutes until the mushroom slices become soft.
  • Add tomato paste and all the seasonings. Stir and cook until everything is well combined.
  • Stir in cooked pasta, then pour in the milk and pasta water. Cook until it becomes creamy and the pasta is all covered with the sauce.
  • Plate the pasta. Garnish with some chopped parsley and a generous amount of freshly grated parmesan cheese on top.
  • Serve warm and enjoy!
