uncooked jasmine rice

beech mushrooms

trim roots and separate the mushrooms, feel free to use your preferred type of mushroom

diced carrots
1/3

edamame beans
1/3
cup
corn
Chopped green onions

Sauce Ingredients:

tbsp
miso paste
2
tbsp
soy sauce
1/4
tsp
salt
Instructions
In a small bowl, mix the sauce ingredients until smooth.
Add the rinsed jasmine rice to the rice cooker and fill with water to the line that corresponds to the amount of rice.
Add about 2/3 of the prepared sauce over the rice and mix well. Layer the mushrooms, carrots, edamame, and corn on top in an even layer.
Place the salmon fillet on top. Spread the remaining sauce evenly over the top and sides of the salmon using a brush or spoon.
Start the rice cooker and let it cook until done.
Once the rice is ready, break the salmon into small pieces and mix it with the rice and vegetables.
Garnish with chopped green onions and drizzle extra sauce on top before serving if desired. Enjoy!
