One Pot Rice Cooker Soy Miso Salmon Rice

Ingredients
  

Ingredients:

  • 6 oz salmon fillet
  • 1.5 cups uncooked jasmine rice - rinsed
  • 2 oz beech mushrooms - trim roots and separate the mushrooms, feel free to use your preferred type of mushroom
  • 1/3 cup diced carrots
  • 1/3 cup edamame beans
  • 1/3 cup corn
  • Chopped green onions - for garnish

Sauce Ingredients:

  • 2 tbsp miso paste
  • 2 tbsp soy sauce
  • 1/4 tsp salt

Instructions
 

  • In a small bowl, mix the sauce ingredients until smooth.
  • Add the rinsed jasmine rice to the rice cooker and fill with water to the line that corresponds to the amount of rice.
  • Add about 2/3 of the prepared sauce over the rice and mix well. Layer the mushrooms, carrots, edamame, and corn on top in an even layer.
  • Place the salmon fillet on top. Spread the remaining sauce evenly over the top and sides of the salmon using a brush or spoon.
  • Start the rice cooker and let it cook until done.
  • Once the rice is ready, break the salmon into small pieces and mix it with the rice and vegetables.
  • Garnish with chopped green onions and drizzle extra sauce on top before serving if desired. Enjoy!
