In a small bowl, combine the honey BBQ sauce and Sriracha. Mix well and set aside.
Heat 2 teaspoons of oil in a large skillet over medium-low heat. Add the bacon in an even layer and cook until crispy, lowering the heat if needed to prevent burning. Transfer the bacon to a plate and roughly chop into bite-sized pieces.
Leave about 2 tablespoons of the bacon grease in the pan, then add the butter and sliced onions. Cook over medium-low heat for around 30 minutes, stirring often, until caramelized. Add a few splashes of water or white wine as needed to deglaze the pan. Transfer to a plate and set aside.
In the same skillet, add a little more oil if needed, then add the ground beef. Cook until browned, breaking it up as it cooks. Season with the garlic powder, smoked paprika, cumin, salt, and black pepper. Arrange the cheese slices evenly over the beef, cover, and cook for 1–2 minutes, or until the cheese is melted.
Assemble the bowl by first adding the fries as the base. Top with the shredded lettuce, crispy bacon, caramelized onions, and cheesy ground beef. Finish with the pickled jalapeños, burger sauce, BBQ-Sriracha sauce, and chopped chives. Enjoy!
