Golden Fried Shrimp with Wasabi Mayo

Ingredients
  

Main Ingredients:

  • 12 large peeled shrimp or prawns - deveined
  • 1 egg yolk
  • 1/8 tsp salt
  • 1 pinch black pepper
  • 1/2 tsp fresh lemon juice
  • 1 cup corn flour or regular flour
  • 3-4 cups oil
  • Dried parsley - for garnish

Sauce Ingredients:

  • 1/3 cup mayo
  • 1 tbsp mustard
  • 1 tsp wasabi
  • 1/2 tsp fresh lemon juice

Instructions
 

  • In a bowl, combine shrimp, egg yolk, salt, ground black pepper, and 1/2 tsp lemon juice. Mix until well combined.
  • In a separate small bowl, add all the sauce ingredients and mix well.
  • Heat the oil (enough for frying the shrimp) in a medium-sized frying pan or pot over medium to high heat until hot (around 350°F)
  • Coat each shrimp with corn flour. Slowly place each flour-coated shrimp in hot oil and fry for about 2 minutes. Try not to overcrowd the pan. You may need to do it in batches.
  • Transfer the cooked shrimp to a serving bowl. Pour the prepared sauce over the shrimp and mix until evenly coated. Garnish with dried parsley, enjoy!
