1head butter (Bibb) lettuce or iceberg lettuce - leaves washes and separated
2tbspolive oil
2tspsesame oil
1red onion - diced
2clovesgarlic - minced
2tspgrated ginger or ginger paste
116oz bag tricolor coleslaw mix
1/4cupchopped cilantro and/or green onions - for garnish
1tspsalt
1/2tspfreshly ground black pepper
Sriracha - for drizzle
Sauce Ingredients:
2tbspsoy sauce
1tbspoyster sauce
2tsprice vinegar or apple cider vinegar
1tbspchili crisp or chili oil
Instructions
Heat the olive oil in a large skillet over medium heat. Once hot, add the ground meat. Use a spatula or a meat chopper to break it up into small pieces. Season with salt, black pepper, ginger. Continue to cook until browned, then removed from the pan and set aside.
In the same pan (wipe out any excess moisture), add sesame oil and diced onion, sauté for 3 minutes. Add the minced garlic and cook for another minute. Stir in the coleslaw mix and cook until wilted.
Return the cooked meat to the pan. Add in all the sauce ingredients and stir until everything is evenly combined and heated through.
Scoop 3-4 tablespoons of the filling onto each lettuce wrap.
Garnish with chopped cilantro and/or green onions, if desired. Drizzle with Sriracha on top for a little bit of a spicy finish.
