Creamy Bacon and Mushroom on Toast

- 1 tbsp oil
- 1/2 red onion - diced
- 2 cup sliced baby Bella mushrooms
- 6 slices bacon - cut into bitesize
- 1/3 cup heavy cream
- 1 slice American cheese
- 1/2 tsp black pepper
- 1 pinch salt
- 4 slices toasts
- Dried parsley - for garnish
Heat a skillet over low-medium heat. Add the bacon pieces and cook for about 3-4 minutes to render the fat.
Once there's enough grease in the pan, add diced onion and cook for another 2 minutes until slightly softened.
Add in the sliced mushrooms and cook for about a minute until the mushrooms are soft.
Pour in the heavy cream and add in the American cheese. Cook until the cream has thickened and the cheese melted over low-medium heat.
Remove from heat and serve the creamy bacon and mushroom mixture over a couple pieces of toasts!
Garnish with dried parsley before serving if desired.
