Instructions
Cook the noodles:
Cook lo mein noodles according to package instructions. Drain and set aside.
Marinate the beef:
In a large bowl, combine the beef slices with all marinade ingredients. Mix until evenly coated, then drizzle in 2 teaspoons of olive oil and mix again. Set aside to marinate for 10–15 minutes.
Prepare the sauce:
In a separate bowl, combine all sauce ingredients and mix well. Set aside.
Cook the vegetables:
Heat 2 tablespoons of olive oil in a wok or large pan over medium heat. Add the sliced onions and garlic and sauté for 2 minutes, until fragrant.
Add the bell pepper, shredded carrots, and bok choy (or broccoli florets), and sauté for another 2 minutes. Add a splash of water and continue to cook for 1-2 minutes to slightly soften the veggies. Transfer vegetables to a plate and set aside.
Cook the beef:
In the same pan, add 2 more tablespoons of oil. Add the marinated beef and sear until browned and just cooked through.
Combine everything:
Return the cooked vegetables to the pan along with the cooked lo mein noodles. Pour the prepared sauce over everything and toss until everything is evenly coated and glossy.
Finish & serve:
Sprinkle chopped green onions on top. Serve warm and enjoy!
