Ingredients

Main Ingredients:

  • Olive oil
  • 16 oz Lo mein noodles
  • 10-12 oz flank steak or flat iron steak - sliced against the grain into 1/8-inch slices
  • 1 yellow onion - sliced
  • 3 cloves garlic - sliced
  • 1 red bell pepper - sliced
  • 1 large carrot - shredded
  • 2 cups bok choy leaves or small broccoli florets
  • 2 green onions - chopped

Beef Marinade:

  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1/2 tsp salt
  • 1 tsp freshly ground black pepper
  • 2 tsp corn starch

Sauce Ingredients:

  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp freshly ground black pepper
  • 1/4 tsp white pepper - optional
  • 1 tsp sugar
  • 1 tsp beef bouillon
  • 1/2 tsp crushed chili flakes
  • 1 tsp minced ginger
  • 2 tbsp water

Instructions

Cook the noodles:

  • Cook lo mein noodles according to package instructions. Drain and set aside.

Marinate the beef:

  • In a large bowl, combine the beef slices with all marinade ingredients. Mix until evenly coated, then drizzle in 2 teaspoons of olive oil and mix again. Set aside to marinate for 10–15 minutes.

Prepare the sauce:

  • In a separate bowl, combine all sauce ingredients and mix well. Set aside.

Cook the vegetables:

  • Heat 2 tablespoons of olive oil in a wok or large pan over medium heat. Add the sliced onions and garlic and sauté for 2 minutes, until fragrant.
  • Add the bell pepper, shredded carrots, and bok choy (or broccoli florets), and sauté for another 2 minutes. Add a splash of water and continue to cook for 1-2 minutes to slightly soften the veggies. Transfer vegetables to a plate and set aside.

Cook the beef:

  • In the same pan, add 2 more tablespoons of oil. Add the marinated beef and sear until browned and just cooked through.

Combine everything:

  • Return the cooked vegetables to the pan along with the cooked lo mein noodles. Pour the prepared sauce over everything and toss until everything is evenly coated and glossy.

Finish & serve:

  • Sprinkle chopped green onions on top. Serve warm and enjoy!
