Servings 20 Bacon Wrapped Enoki Mushrooms
- 1 bunch enoki mushrooms - 200g
- 10 slices bacon - halved vertically
- 2 tbsp honey
- 2 tbsp low sodium soy sauce
- 1 tbsp water
- 2 tsp lemon juice or vinegar
- 2-3 tsp sriracha
- 1/4 tsp chili flakes
- Roasted sesame seeds - optional topping
- Chopped green onions - optional topping
In a small bowl, mix together honey, soy sauce, water, lemon juice, sriracha, and chili flakes until well combined.
Cut about 1.5” off the roots of the mushrooms. Divide the mushrooms horizontally into 8 equal portions.
Tightly wrap the middle of each portion of the enoki mushroom with a piece of the prepared bacon.
Heat 1 tablespoon of oil in a large non-stick pan or skillet over medium heat, place the bacon wrapped enoki mushrooms in the pan in an even layer, end-side down. Cook for about 2 minutes on each side until fully cooked and lightly golden browned.
Remove the bacon wrapped enoki mushrooms from pan. Reduce the heat to low then pour in the prepared sauce. Once the sauce starts to bubble, add the enoki mushrooms back in. Gently flipped them a couple of times to ensure that they are evenly coated with the sauce.
Turn off the heat and plate the enoki mushrooms. Sprinkle with some roasted sesame seeds and/or chopped green onions on top, if desired. Enjoy!
